7/19/2007 - Sautéed Chicken With a Broccoli & Smoked Gouda Sauce - Chef Yancy Roush
6 ounces of chicken breast (pounded until 1/4 inch thick)
1 cup flour
3 tablespoons butter
3 tablespoons olive oil
2 cups heavy cream
1/2 cup Smoked Gouda Cheese (shredded)
2 tablespoons pimentos
1 cup broccoli (poached)
1/2 cup corn starch
1/2 cup water (mixed together)
Salt, pepper, granulated garlic to taste
Pre heat skillet to a medium heat.
Add butter and oil. .
Dredge chicken through seasoned flour. .
Sauté until golden brown on each side for approximately 2 minutes on each side. .
To make sauce:
Heat heavy cream until simmer. .
Add slurry mixture until medium sauce; add cheese, pimentos, broccoli, and season with salt, and pepper. .
Place chicken on a bed of your favorite rice and top with this nice robust creamy sauce. .
