Daybreak 11/04/2010: Chef Yancy's Lasagna Soup



1 llb Italian Sausage
1c onion, chopped
1c carrots, chopped
2T garlic, minced
4c chicken broth, plus 1 can
1 can diced Italian tomatoes
1c tomato sauce
1c small pasta (ditalini)
½ box of frozen spinach
1T dried oregano
S and P to taste
Shredded mozzarella cheese, garnish


Brown sausage, add onions, and carrots, sauté 3 min. Add garlic,
sauté 3 min. Add 4 c broth, tomatoes, oregano and sauce, bring to
a boil. Add ditalini and simmer 7-10 min, stirring often.Add spinach 5
min before serving. Add salt and pepper. Adjust liquid as needed with
chicken broth.
Garnish with cheese when ready to eat.
