Daybreak 11/18/10 Pork Loin With Fruit Chutney


Pork loin-2 lbs cut into quarters

Salt, pepper, and garlic to taste.

2 cups apples diced

½ cup cran raisins

1 cup onions diced

1cup bell peppers diced

½ cup white vinegar

1 cup brown sugar


Procedure- Sear seasoned pork loin in skillet with medium high heat until browned evenly on all sides.

To make chutney: blend apples, craisins bell peppers with vinegar and sugar mixture.

Top over pork loin cover dish bake at 350 for 30-40 minutes or until internal temperature is 160.

Let set for 15 minutes, slice into medallions, and garnish with chutney.
