Daybreak 12/09/2010: Chef Yancy's Fall Harvest Casserole



5 cups 1/4-inch diced sweet potatoes (about 2 large)
5 cups chopped apples (about 3 medium)
1 cup sweetened dried cranberries
1 1/2 cups firmly packed brown sugar, divided
2 teaspoons ground cinnamon, divided
1/4 teaspoon salt
1/4 cup (1/2 stick) butter, cut into teaspoon-size pieces
1 cup quick-cooking oatmeal
1/4 cup all-purpose flour
1/2 cup (1 stick) butter, melted


Preheat over to 400 degrees.

In a large bowl, combine sweet potatoes, apples and dried cranberries. In a small bowl. combine 1/2 cup brown sugar, 1 teaspoon Cinnamon and salt. Add sweet potato mixture, tossing to combine. Spoon mixture into a 9x13 baking dish. Dot with butter pats

In a small bowl, combine oatmeal, 1 cup brown sugar, flour, and 1 teaspoon cinnamon. Stir in melted butter; spoon evenly over top of casserole.

Bake, covered, for 45 minutes. Uncover and bake for 30 minutes more.
