Chef's Apple Caramel Pumpkin Cheese Cake


1 cup graham cracker crumbs
2 tablespoons sugar
4 oz. melted butter


16 oz. Cream Cheese
1 ½ Cup granulated sugar
4 tab. Corn starch
4 egg whites
1 Pint yogurt
1 ½ cup mashed cooked or canned pumpkin
½ teas. Pumpkin spice

4 apples peeled and sliced and cooked
8 oz. caramel sauce


Combine cracker crumbs, sugar and butter. Pack into bottom of 10 inch spring form pan. Bake at 350 Degrees for 5 to 8 min. and allow to cool. In a blender add all filling ingredients and blend well. Add mixture on top of crust and bake at 275 degrees for 70 minutes. Top with cooked apples and caramel sauce.
