Pumpkin Roll

Ingredients

Cake Layer

  • 10” x 15” jellyroll pan
  • 1 tsp. baking powder

  • 3 eggs
  • ½ tsp. salt

  • 1 c. sugar or splenda
  • 1/2 teaspoon cinnamon

  • ¾ c. plain flour

  • 2 c. Alabama pumpkin

  • 1 tsp. baking soda
  • ½ c. chopped pecans

    Directions

    1.) Beat eggs well. Gradually add sugar. Beat until well combined. Mix
    together flour, soda, baking powder, salt, and cinnamon. Add to egg
    mixture gradually. Add pumpkin and pecans and mix. Then spray jelly roll pan WELL with no stick cooking spray. Place wax paper in sprayed pan. Saturate wax paper with spray. Pour mixture into pan and spread very thin. Cook in preheated 375 oven for 15-17 minutes. The cake will be slightly brownish on top. Cool 10 minutes or so.

    2.) While this is cooling, sprinkle a dishtowel with a generous amount of
    powdered sugar.

    3.) Invert cake onto powered sugar cloth. Remove wax paper. Fold the
    dishtowel edges around the cake & roll it up including the dishtowel to set the shape.

    4.) Cool in towel until completely cool.
