Veggie Lasagna

Ingredients

  • 12 lasagna noodles (whole wheat)
  • 2 1/2 jars pasta sauce
  • 16 oz. cottage cheese
  • 16 oz. shredded Mozzarella
  • 16 oz. frozen spinach
  • 2 eggs
  • 1 carton fresh mushrooms
  • 10-12 baby carrots
  • 1 green pepper
  • 1 onion

    Directions

    1. Thaw spinach, dry well.



    2. Mix with eggs, 2/3 of Mozzarella and all of the cottage cheese.



    3. Cover bottom of a 13x9 pan with sauce.



    4. Place noodles on top of sauce.



    5. Spread 1/3 of cheese spinach mixture on top of noodles. Cover with sauce. Repeat until ingredients are gone.



    6. Sprinkle Mozzarella on top.



    7. Preheat oven to 350°.



    8. Bake for 45-55 minutes and let stand for 15 minutes before serving.
