Daybreak 11/6/08: Chef Yancy Roush's Chicken Marsala


8 oz chicken breast (pounded thin)
1 cup seasoned flour-salt and pepper
1/2 cup mushrooms
1/4 cup Marsala wine
1 cup beef steak
2 tablespoons corn starch
2 tablespoons of water
1 tablespoon parsley chopped fine
1/2 butter and mixture


Preheat skillet to medium heat
Add butter and oil mixture
Dredge chicken through seasoned flour and place into skillet
Brown on each side ( approximately 2-3 minutes per side)
Add mushrooms and Marcella wine
Cook for 2 minutes
Add beef stock and bring to a simmer.
Add corn starch and water mixture to form a medium sauce
Serve over your favorite pasta
