Daybreak 3/26/09: Chef Yancy's Sauteed Pork with an Apple Chutney Sauce


4 ounces pork tenderloin
1 tablespoon olive oil
1/2 cup red, green, and yellow peppers (finely diced)
1/4 cup onion (finely diced)
1/4 cup apple (medium cut)
1 cup apple juice
1/4 cup brown sugar
1/2 teaspoon curry powder
Salt, pepper, garlic to taste
6 cups romaine lettuce


Take pork tenderloin and season with salt, pepper, garlic and pound until a thin consistency.

In medium skillet over medium heat place olive oil in pan and let heat, add seasoned pork tenderloin to skillet until browned on both sides taking approximately 2-3 minutes on each side. When browned off pull to the side and place on separate plate.

To make sauce add peppers, onions, apple and saute for approximately 2-3 minutes, add apple juice and curry powder. Cook for approximately 2 minutes reducing apple juice. Add pork back into skillet to incorporate flavors into the pork and let cook for approximately 2 minutes and serve atop of your favorite bed of wild greens, or romaine lettuce.
