Daybreak 4/9/09: Chef Yancy's Coconut Shrimp with a Sate' Sauce


12 Shrimp (peeled & divined)
3/4 cup coconut lopez
1 cup seasoned flour (salt, pepper, garlic)
2 cups coconut and flour mix (equal parts)
4 cups vegetable oil

Sauce ingredients
1/4 cup coconut lopez
1/4 cup peanut butter
1 teaspoon red pepper flakes
1 tablespoon green onions (diced)


Preheat vegetable oil to 300 degrees in a medium sauce pan. Dredge shrimp through flour then coconut lopez. Then dredge through coconut flour mixture. Deep fry approximately 2-3 minutes or until golden brown. Remove and place on paper towels.

To make, sauce saute green onions and red pepper flakes for 1 minute. Add peanut butter, and coconut lopez. Cook approximately 2 minutes. Use this sauce for dipping shrimp. Enjoy!
