Daybreak 6/25/09: Chef Yancy Roush's Pizza Dough


1 1/2 cups of room temperature water
1 package of fast rising yeast
1/2 teaspoon salt
1 tablespoon olive oil
3 cups unbleached flour
1/2 cup cornmeal


Place water, salt and yeast into large mixing bowl. Dissolve yeast and salt in water. Add oil, flour, and cornmeal. Mix together for 5-10 minutes to form sticky batter and keep adding remaining flour kneading as you do to form dough. Allow to rise until double in bulk. Roll the dough on a lightly floured surface and then on to a lightly greased baking sheet. Bake at 350 degrees for approximately 10-15 minutes depending on oven.
From this point you can do several things, make a dessert pizza with dessert topping or your favorite pizza. Place toppings of choice if making pizza and cook for an additional 15-20 minutes or until cheese is melted.
