Daybreak 7/30/09: Chef Yancy Roush's Fresh Tomato Salsa


2 medium tomatoes, seeded and diced
2 jalapeno pepper, minced
2 tablespoons finely chopped red onion
2 tablespoon chopped fresh cilantor
1-2 cloves of garlic, minced
1-2 tablespoon lemon juice
1/4 teaspoon salt
1/4 cup fresh corn
1/4 cup green peppers, diced
1 tablespoon sugar or as needed
1/4 teaspoon cumin
1/4 cup green onion, diced


Combine all ingredients together well. Let marinate for at least 1 hour and serve with your favorite chips, crackers, or bread of your choice.

Chef Tip: You might want to double this recipe so you have extra for snaking.
