Texas Caviar



  • 1 Green Pepper
  • 1 Yellow Pepper
  • 1 Red Pepper
  • 1 Orange Pepper
  • Bunch of Scallions
  • 1 Sweet Onion
  • 1 Cup Diced Celery
  • 2-3 Jalapenos
    *all of these should be chopped fine

  • 1 can black eye peas
  • 1 can sweet white corn
  • 1 can black beans
  • 1 large jar pimentos (chop)
    *these should be strained individually with cold water run over them


  • 1 cup Olive Oil
  • 1 cup Sugar
  • 1/2 cup apple cider vinegar
  • Mix together in separate bowl.


    Add all of your dry, finely chopped ingredients to a large, clear serving bowl. You'll want the bowl to be clear/glass so people can see how pretty the Texas Caviar is!

    Next add each strained ingredient to the serving bowl. You may need to chop the pimentos as well. Gently stir/mix everything together.

    In a separate bowl, make your dressing by combining the olive oil, sugar and vinegar. When it's mixed, pour it into the serving bowl over the other ingredients. Cover and let marinate in your refrigerator at least 12 hours or so.

    Before serving, strain the dressing and ingredients using a large strainer. Then pour your strained Texas Caviar back in your severing bowl and your ready to Dip! My favorite is using Fritos Scoops! Hope you enjoy!
