Iron Grilled Tequila Shrimp


1 pound Shrimp 16-20 (peeled and cleaned)
2 ounces fresh lemon juice (squeeze from lemon)
2 ounces fresh lime juice (squeeze from lime)
1 tablespoon Kosher salt
1/4 tablespoon course ground pepper
1/4 cup olive oil
1 ounce or 1 shot Tequila
3 tablespoons brown sugar


To make marinade combine olive oil, lemon, lime, salt, pepper, brown sugar, and tequila. Blend together until all ingredients are well blended. Add cleaned shrimp to marinade and let stand in refrigerator for at least 30 minutes. Take shrimp out of marinade and place on skurs. Place in cast iron skillet on medium high heat. Turning often cook shrimp 5-6 minutes or until done. Remove from skillet and display in cut pineapple, garnished with lemons and limes, and a side of freshly made marinade for dipping.
