Daybreak 1/4/10: Chef Yancy's Spaghetti Squash


1 1/2 cups spaghetti squash (cooked)
2 cups water \ chicken stock
2 cups poached broccoli
1 cup cauliflower poached
1 poached carrots
1 quart marinara
1 cup parmesan cheese


Pre heat oven to 350 degrees. Cut squash in half and de seed. Place in baking dish with water or stock. Bake for approximately 40-45 minutes or until tender. Fluff with a fork and squash is ready.
Heat marinara sauce. Add vegetables at last. Top over spaghetti squash, and garnish with parmesan cheese.
