7/12/2007 - Sautéed Zucchini, With Penne Pasta

Serves 2

  • 1/4 cup olive oil (or as needed)
  • 1 cup onion (diced)
  • 1 cup green pepper (diced)
  • 1 cup yellow squash (diced)
  • 1 cup zucchini (diced)
  • 1/4 cup pimentos (diced)
  • 1 tablespoon garlic (minced)
  • 4 cups penne pasta (cooked)
  • 1/2 cup shredded parmesan cheese
  • Salt &pepper to taste.

    Directions

    Preheat skillet until medium heat. Add 1/2 cup olive oil to pan, sauté onions, peppers until tender approximately 1-2 minutes. Add zucchini and yellow squash and sauté for approximately 1 minute. Add pimentos, garlic, and seasonings, fold in pasta. Top with parmesan cheese and remainder of olive oil. Toss well and enjoy!
