Daybreak 5/6/2010: Chef Yancy's Mother’s Day Vegetarian Quiche



4 Beaten Eggs

1 cup heavy cream

1 cup milk

1 tablespoon flour

½ teaspoon salt

½ cup diced peppers

¼ cup diced onions

1 cup of poached asparagus tips

1 ½ cups shredded Swiss cheese

1 pastry crust


Bake pastry crust at 325 degrees for 10 minutes. Remove from oven then combine all of your ingredients, place into pie shell and return to oven bake a t 325 degrees for 45-50 minutes or knife inserted near center comes out clean.
Let stand 10 minutes before serving.
